Lets face it, most airport food is boring. Unless you’re in the US or Europe on a short Bacone15haul flight (so they don’t serve much in the way of food) the only reason you eat in a airport is to fill in time. So why are the offerings so darned boring!

I’ve always been a believer in having “grazing” food at airports – lots of fascinating little things you can nibble on. It not only is more interesting for the passengers but they also end up spending more. We’re starting to see more of that in airports with the likes of Tapas etc emerging.

I came across a great concept a little while ago which won an award at the Bacon Camp which would be just terrific for an airport – or even a market as portable food. Not only is it bacon (and most people know the mere sniff of bacon cooking starts to make you hungry) but its also portable, interesting and shouldn’t be too expensive to make with a little work. Its called the Bacone and basically its a bacon cone filled with scrambled eggs & hash browns then topped with cheese & a biscuit.

i2dw5nf19ms0abxklO5LfyZoo1 500OK the directions for making them really make it impossibly difficult to sell them in any fast service situation BUT it wouldn’t be too difficult to modify, pre-make the cones etc. It would really just take a little tweaking by a competent food service technician.

My guess on novelty value alone you could easily get $6 for one of these & they’d sell faster than you could make them. Plus many airports have their peak time in the mornings when the range of relevant food options is seriously limited.
